* Meat: 2 lb Beef stewing meat
* Produce:
* 2 sprigs fresh thyme, Leaves from fresh
* 1 Bay leaf
* 4 Carrots, large
* 1 tbsp Garlic, fresh
* 8 oz Mushrooms, fresh
* 2 Onions, large
* 3 Russet potatoes
* Canned Goods:
* 2 1/2 cups Beef broth
* 1 small can Tomato sauce
* Baking & Spices:
* 1/2 cup All-purpose flour
* 1 tsp Black pepper, ground
* 1 1/2 tsp Kosher salt
* 1/2 tsp Paprika
* 1 packet brown gravy
* 1 packet beef stew mix
Instructions:
* Brown the Beef: In a large Dutch oven (or heavy pot), brown the beef in a little oil.
* Flour the Beef: Remove the beef from the pot and add the flour. Stir until the flour is evenly coated on the beef.
* Simmer the Sauce: Return the beef to the pot. Add the tomato sauce and stir to combine.
* Add the Flavor: Add the bay leaf, thyme, and the remaining spices. Stir well.
* Add Veggies & Liquid: Add the carrots, onions, mushrooms, and potatoes to the pot. Pour in the beef broth, making sure the vegetables are mostly covered with liquid.
* Simmer to Perfection: Bring the stew to a rolling boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender.
Tips & Variations:
* Add some heat: Include a pinch of red pepper flakes for a bit of spice.
* Make it heartier: Add some pearl barley or small potatoes to the stew.
* Fresh Herbs: Use fresh rosemary or oregano instead of (or in addition to) thyme.
